Yuca (cassava) is a gluten-free root rich in fiber, potassium, and vitamin C. It gives lasting energy, supports digestion. Keep boiled yuca in fridge to cook this dish in minutes Prep Tip: Boil frozen yuca for 25 minutes until tender, drain, and store in the fridge. It’s ready to add to meals all week — quick, nourishing, and delicious! Recipe: Ingredients • 3 tbsp extra-virgin olive oil or avocado oil • 2 pasture-raised eggs • 1 handful of boiled, thinly sliced yuca (you can find frozen, peeled yuca at ShopRite, Whole Foods, and other major stores) • 1 handful of fresh organic parsley, chopped • ⅓ tsp iodized sea salt ⸻ Directions 1. Warm the oil: In a ceramic-coated pan, heat 3 tablespoons of olive or avocado oil over low heat for about 2 minutes. 2. Prepare the eggs: Beat the eggs with sea salt until smooth. Pour into the warmed pan. 3. Add yuca and herbs: Immediately add the sliced boiled yuca and chopped parsley on top of the eggs. 4. Cook gently: Cook for 2 minutes on low heat, then carefully flip. Cook another minute on the other side until golden. 5.
